Pleurotus citrinopileatus, the golden oyster mushroom, is an edible gilled fungus. Its native to Asia and provides a great color and flavor to cooking. Known to have a nutty flavor when cooked with a background citrus note. (We get a bit of watermelon rind or apricot flavor)
